A grease trap is a device that captures fats, oils, and grease before they enter the sewer system.
Installed between a commercial kitchen’s drains and the municipal sewer connection, a grease trap (also called a grease interceptor) slows the flow of wastewater so that grease, which is less dense than water, rises to the top and is captured in the trap rather than flowing into the sewer line.
Grease traps are required by code for most commercial food service operations. They need regular cleaning — how often depends on the volume of cooking and the trap’s size. A trap that is not cleaned regularly overflows, sending grease into the sewer line and creating exactly the blockage problem it is designed to prevent.
We clean grease trap lines and jet the drain lines connected to them. If your trap is overflowing into your drain lines, the lines will need jetting too — the trap failure has already caused downstream buildup.
